And we’re hiring nice people! HomeState is currently hiring for the position of: LEAD PREP COOK (PM Shift) THE GIG // As a member of the kitchen team you provide the guests with an exceptional experience by implementing HomeState’s standards of service, product quality and cleanliness.

JOB RESPONSIBILITIES: Promote, work, mentor, control and act in a manner consistent with the mission of HomeState.
Create the daily prep list (Production List) at the start of each shift for assigned duties to team members.
Control and manage finished goods daily inventory counts.
Adhere and manage all checklists and HACCP forms that apply to our daily production shift.
Understand and comply with standard production metrics, prepping procedures, cooking methods, quality standards, kitchen rules, policies, and procedures.
Maintain and consistently check for the entire kitchen sanitation, work station areas, kitchen equipment, refrigeration coolers, bathrooms, back patio and team common areas.
Check and monitor food storage (Cold and Dry) in designated containers, shelves and storage areas to prevent spoilage or wastage.
Properly label and date all food storage containers in accordance with standard operating procedures (SOP).
Portion, according to standard portion sizes and recipe specifications and package in vacuum bags, wrap the food, or place it directly in the desired container for service to stores.
Weigh or measure ingredients as noted in recipe Instructions methods.
Receive and make sure all raw and dry materials are being properly stored in a timer manner to its designated or storage areas.
Assist and help the commissary manager in developing new recipes or R&D products.
Keep and maintain records of the quantities and lot codes of the product being used.
Prepare and package a variety of beverages such as alcoholic cocktails in batches and non-alcoholic beverage items on a daily basis.
Monitor and keep a safe culture environment throughout the entire shift, work closely with the dishwasher and make sure floors are free of standing water, debris or soiled food.
Promptly inform managers when equipment is not working properly using the established methods of communications such as daily reports, emails, group chats, etc.
Complete and submit the opening and closing daily reports with important messages or communications, done by the end of each shift.
Support and coordinate with the Commissary Manager, all daily vendor orders are being submitted properly and on time.
Perform daily shift huddles with the team for important communication or follow-ups (at least for 5 mins).
Coordinate, mentor and assist fellow employees to meet the kitchen daily/weekly expectations or the needs of the commissary operations.
Fill-in for fellow team members where needed to ensure commissary operations, standards and efficiencies are being met.
Take pride in your work each day to make things a little better than they were yesterday.
Fully understand and exhibit the HomeState culture, embodying our mission, visions and core values.
Requirements: 2 years in the catering kitchen, commercial kitchens preferred (Food Manufacturing) Knowledge of preparation of a variety of foods such as meats, beans, vegetables or desserts, according to recipes, orders or instructions and following approved operating procedures of kitchen equipment.
Knowledge and prior experience in preparing vegetables and fresh produce for cooking or batching.
Knowledge and experience in using commercial/industrial equipment such as dicers, choppers, blenders, mixers, combi ovens, ranger stoves, vacuum sealers, cooling down units.
Food Safety Certification required.
Personable and enjoys working with a diverse team.
Ability to stand for long periods of time (6 or more hours per shift) Knowledge and experience of commercial and Industrial equipment.
Basic computer skills and basic knowledge of email communication, typing, web browsing, etc.
ERP Systems basic knowledge (BIG PLUS) Ability to lift up to 40 lbs.
Passion for food, creation and implementation of new ideas.
