POSITION DESCRIPTION
POSTION: DISHWASER/STEWARD
FLSA DESIGNATION: NON-EXEMPT
POSITION REPORTS TO: EXECUTIVE CHEF
SALARY RANGE: $18.
00 - $19.
00 PER HOUR POSITION PURPOSE: The Dish and General Utility/Steward position is responsible for maintaining cleanliness and sanitation standards for china, glassware, tableware, cooking utensils, etc.
, using machine and manual cleaning methods.
This position also ensures the dishwashing and kitchen areas are maintained as a clean, safe and sanitary facility.
ESSENTIAL FUNCTIONS AND BASIC DUTIES: Sort and rinse dirty dishes, glass, tableware and other cooking utensils and place them in racks to send through dish machine.
Sort and stack clean dishes.
Carries clean dishes to cook's line and other proper storage areas.
Rewashes soiled dishes before delivering.
Change dishwater in dish machine every hour and maintain clean sinks at all times.
Wash pots, pans and trays by hand.
Pick up dishes and pans placed at the line and refill during service.
Remove trash and garbage and take them to the dumpster.
Clean the kitchen floor before each service.
Set up or break down dishwashing area.
Clean and roll/unroll mats.
Fill/empty soaking tubs with cleaning/sanitizing solutions.
Sweep/mop floors.
Assemble/disassemble dish machine.
Sweep up trash around exterior of restaurant and garbage dumpster.
General restaurant and restroom cleaning as directed.
Wipe up any spills to ensure kitchen floors remain dry.
Must notify Manager or Chef immediately when dish machine wash or rinse cycle falls below safety standard temperatures.
Never touch clean dishes without washing hands first.
Fulfill the duties that come with each station assigned, ex.
Pot Wash, Dish Machine, Pantry, “Up & Down”.
Follow Overnight Sanitation Checklist.
OTHER: Regular attendance in conformance with the standards, which may be established from time to time, is essential to the successful performance of this position.
Employees with irregular attendance will be subject to disciplinary action, up to and including termination of employment.
Due to the cyclical nature of the hospitality industry, employees may be required to work varying schedules to reflect the business needs.
In addition, attendance at all scheduled training sessions and meetings is required.
Upon employment, all employees are required to fully comply with Cipriani rules and regulations for the safe and effective operation of the facilities.
Employees who violate rules and regulations will be subject to disciplinary action, up to and including termination of employment.

This role routinely uses sinks and dishwashers and tools to clean kitchen appliances.
Employees in this role are frequently exposed to hot water, potentially slippery floors, garbage disposals and cleaning chemicals.
Most work tasks are performed indoors.
Temperature is moderate and controlled by facility environmental systems.
Must be able to bend, stoop, squat and stretch to fulfill tasks.
Must be able to exert well-paced ability in limited space and to reach other locations of the property on a timely basis.
Talking and hearing occur continuously in the process of communicating with guests, supervisors and other employees.
Vision occurs continuously with the most common visual functions being those of near vision and depth perception.
Requires manual dexterity to use operate all necessary equipment.
The employee must frequently lift and/or move objects up to 25 pounds and occasionally lift and/or move objects up to 50 pounds.
QUALIFICATION STANDARDS: Education: High School Diploma or a combination of education and experience required.
Experience Required: Previous related experience preferred.
Licenses or Certificates: Ability to obtain and/or maintain any government required licenses, certificates or permits.
Grooming: All employees must maintain a neat, clean and well-groomed appearance per Cipriani standards.
Electronic Devices: Personal cellular phones, pagers, I-pods, radio/cd players, headsets and/or other electronic devices are not permitted to be worn, carried or used while on duty.
